Dang...those are my favorite cookies. They're one of the few things I miss now that my body won't accept sugar without making me very, very sorry I even tried. They sound delicious.
They are crumby to the touch - crisp, but not crumbly. They don't crumble until you take your first bite, then they melt with mild sweetness. Distinctly made for a nice cup of tea. Brown sugar for certain next time.

They are better the longer they age I am finding, as well. CAN'T BE RUSHED.

I saw my landlord outside, and I asked him to try one and asked him what he thought. He said they were kind of like soda bread, but sweeter - anyway he had 3, so they must be alright. When I offered the 3rd he said no and as I was walking away and he stopped me and said he did want the third one after all. Now, that's all I needed to know....
I had these over in Scotland. A little tourist shop was selling them and the guys in the shop were hilarious. And the shortbread was still warm....
I had some warm out of the oven last night, it was good, but the longer they age/set/develop the better I like them. I wish I was in the Willow Tea Room right this very minute...
These sound really good, I can't have any- got to keep losing weight you know. But, I can sure make some for my family, thank you for sharing the recipe and directions, too.
